Creating Turkish Lentil Köfte is easy when you follow these simple steps:
1. Cook the Lentils: Rinse the lentils and place them in a pot with 3 cups of water. Bring to a boil, then reduce the heat and simmer until soft, about 15-20 minutes.
2. Prepare the Bulgur: Once the lentils are cooked, remove them from the heat and stir in the fine bulgur. Cover the pot and let it sit for about 10-15 minutes to allow the bulgur to absorb the moisture.
3. Sauté the Onion: In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
4. Mix Ingredients: In a large bowl, combine the cooked lentils and bulgur mixture, sautéed onions, tomato paste, paprika, salt, black pepper, chopped parsley, green onions, and lemon juice. Mix well until all ingredients are thoroughly combined.
