Ingredients

Scale
  • For the Stir-Fry:

    • 1 lb ground beef (or turkey for a leaner option)
    • ½ cup diced onion
    • 2 cloves garlic, minced
    • 1 red bell pepper, sliced
    • 1 cup shredded carrots
    • 1 cup broccoli florets
    • 1 tbsp sesame oil (optional for flavor)
  • For the Teriyaki Sauce:

    • ¼ cup low-sodium soy sauce
    • 2 tbsp honey or brown sugar
    • 1 tbsp rice vinegar
    • 1 tsp grated ginger
    • ½ tsp red pepper flakes (optional)
    • 1 tbsp cornstarch + 2 tbsp water (for thickening)
  • For Serving:

    • Steamed rice (white or brown)
    • Chopped green onions
    • Toasted sesame seeds

Instructions

  • Cook the Ground Beef: In a large skillet over medium-high heat, cook ground beef and diced onion until browned. Add garlic and cook for another 30 seconds.
  • Sauté the Vegetables: Add bell peppers, carrots, and broccoli to the skillet. Stir-fry for 3–4 minutes until slightly tender.
  • Make the Sauce: In a bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes. Mix cornstarch with water, then stir into the sauce.
  • Combine Everything: Pour the sauce into the skillet, stirring to coat everything. Let simmer for 2–3 minutes until thickened.
  • Serve & Garnish: Spoon over steamed rice and garnish with green onions and sesame seeds. Enjoy!

Notes

  • Use tamari or coconut aminos for a gluten-free version.
  • Swap beef with ground turkey or chicken for a leaner option.
