Description

A one-pan dinner that’s quick, hearty, and loaded with bold Southwest flavors. Sweet potatoes, seasoned ground beef, and melted cheddar cheese come together for a wholesome, satisfying meal.


Ingredients

  • 1 tablespoon olive oil
  • ½ cup diced yellow onion
  • 1 pound lean ground beef (90/10%)
  • 5 teaspoons chili powder, divided
  • 2 teaspoons ground cumin, divided
  • 1 teaspoon grated garlic
  • 2 cups diced sweet potatoes
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (4 oz) diced green chiles
  • ¼ cup water
  • ½ cup shredded cheddar cheese
  • Cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add onions and ground beef. Season with 3 tsp chili powder, 1 tsp cumin, and salt/pepper. Cook until beef is browned. Add garlic and cook 1 minute. Set aside.
  2. In the same skillet, add sweet potatoes, diced tomatoes (with juice), diced green chiles, water, and remaining chili powder and cumin. Stir to combine.
  3. Cover and simmer for 20 minutes, stirring occasionally, until sweet potatoes are tender.
  4. Return beef mixture to the skillet. Stir to combine.
  5. Sprinkle cheddar cheese over the top. Cover until cheese melts.
  6. Garnish with cilantro and serve hot.
