- 1 large zucchini (sliced into ½-inch rounds, about 12 slices)
- ½ pound ground beef
- ¼ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- ¼ teaspoon dried thyme
- Salt and pepper to taste
- 3 slices cheddar cheese (quartered)
- 1 tablespoon coconut oil
Instructions
- Slice zucchini into ½-inch rounds and sprinkle with salt. Let sit for 15 minutes, then pat dry.
- In a bowl, mix ground beef with garlic powder, smoked paprika, thyme, salt, and pepper. Divide into 6 equal portions and shape into small patties.
- Heat ½ tablespoon of coconut oil in a skillet. Cook patties for 2 minutes per side, then top with cheddar cheese and let it melt. Remove from skillet.
- In the same skillet, heat the remaining coconut oil and sear zucchini slices for 2 minutes per side until slightly crispy.
- Assemble sliders: place one zucchini slice as the base, add a patty with melted cheese, and top with another zucchini slice.
