Description

Ingredients

– 2 tablespoons extra-virgin olive oil
– 1 red onion, thinly sliced
– 1½ cups cherry tomatoes, halved
– 1 cup corn kernels (fresh or canned)
– 1–2 bell peppers, thinly sliced
– Zucchini noodles (from 2–3 medium zucchinis)
– Salt and freshly ground black pepper, to taste
– Fresh mint, for garnish


Instructions

  • Heat olive oil in a sauté pan over medium heat.

  • Add sliced onion and cook until soft, about 4–5 minutes.

  • Add bell peppers, zucchini noodles, and cherry tomatoes. Sauté 4–5 minutes.

  • Stir in corn kernels and cook for 2 more minutes.

  • Season with salt and pepper to taste.

  • Serve warm, garnished with fresh mint.

– Avoid overcooking zucchini noodles to prevent sogginess.
