Ingredients
– 2 tablespoons extra-virgin olive oil
– 1 red onion, thinly sliced
– 1½ cups cherry tomatoes, halved
– 1 cup corn kernels (fresh or canned)
– 1–2 bell peppers, thinly sliced
– Zucchini noodles (from 2–3 medium zucchinis)
– Salt and freshly ground black pepper, to taste
– Fresh mint, for garnish
Instructions

Heat olive oil in a sauté pan over medium heat.

Add sliced onion and cook until soft, about 4–5 minutes.

Add bell peppers, zucchini noodles, and cherry tomatoes. Sauté 4–5 minutes.

Stir in corn kernels and cook for 2 more minutes.

Season with salt and pepper to taste.
