These crispy Zucchini Garlic Bites are a delicious, healthy snack or appetizer. Made with shredded zucchini, garlic, cheese, and herbs, they are baked or air-fried to perfection. Perfect for dipping in marinara sauce or ranch, they are gluten-free and full of flavor!

- 2 cups shredded zucchini (excess moisture removed)
- 2 cloves garlic, minced
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ cup gluten-free breadcrumbs (or almond flour)
- 1 large egg
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp red pepper flakes (optional)
- Olive oil spray
Instructions
- Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
- Shred zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, mix zucchini, garlic, cheeses, breadcrumbs, egg, salt, pepper, oregano, basil, and red pepper flakes.
- Form the mixture into small 1-inch balls.
- Place on a lined baking sheet or in the air fryer basket.
- Lightly spray with olive oil and bake for 18-20 minutes (oven) or air fry for 10-12 minutes, flipping halfway through.
- Serve warm with marinara sauce, ranch, or garlic aioli.
Notes
- For extra crispiness, roll bites in additional breadcrumbs before baking.
- Substitute dairy-free cheese for a vegan version.
