Juicy, flavorful grilled chicken marinated in a vibrant blend of fresh citrus juices, olive oil, herbs, and a hint of heat. This easy recipe is perfect for meal prep, family dinners, or summer barbecues.

Ingredients

Scale
  • ½ cup olive oil

  • 2 tablespoons Dijon mustard

  • Juice of 1 lime

  • Juice of 1 lemon

  • Juice of 2 oranges

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning or Herbs de Provence

  • 1 teaspoon fresh thyme (or ¼ tsp dried)

  • 1 teaspoon fresh oregano (or ¼ tsp dried)

  • ¼ teaspoon crushed red pepper flakes (optional)

  • 4 boneless, skinless chicken breasts

Instructions

  • Whisk together all marinade ingredients. Reserve ¼ cup for basting.

  • Place chicken in a bowl or bag, pour marinade over, and refrigerate for 1 to 12 hours.

  • Preheat grill to medium heat and oil the grates.

  • Grill chicken 5–7 minutes per side, basting with reserved marinade.

  • Cook until internal temp is 165°F. Let rest for 5 minutes.

  • Garnish and serve with citrus wedges or herbs.

Notes

  • Don’t marinate more than 12 hours or the chicken may become mushy.
