Vanilla Layer:
- 2 cups heavy cream
- 1 cup milk or water
- 2 gelatin sheets (or 2 tsp powdered gelatin)
- 60 g granulated sugar
- Seeds from 1 vanilla pod (or 1 tsp vanilla extract)
Raspberry Layer:
- 1 ½ cups fresh or frozen raspberries
- ½ cup granulated sugar
- ½ cup water
- 1 ½ gelatin sheets (or 1 ½ tsp powdered gelatin)
Instructions
- Soak gelatin sheets in cold water (or bloom powdered gelatin in water).
- Heat cream, sugar, and vanilla in a saucepan until warm. Stir in gelatin until dissolved. Pour into glasses and chill for 3 hours.
- Cook raspberries, sugar, and water until syrupy. Add gelatin and stir. Cool slightly, then pour over set vanilla layer. Chill for 3 hours or overnight.
- Strain the raspberry layer for a smoother texture.
