Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • 2 cloves garlic, minced
  • 34 sun-dried tomatoes, sliced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh spinach
  • ½ tsp red pepper flakes (optional)

Instructions

  • Pat salmon dry and season with salt and pepper.
  • Heat olive oil and butter in a skillet over medium-high heat. Sear salmon for 6-7 minutes on one side, then 2-3 minutes on the other. Set aside.
  • In the same skillet, sauté garlic and sun-dried tomatoes for 30 seconds.
  • Add chicken broth, simmer for 2-3 minutes, then stir in heavy cream and Parmesan cheese.
  • Add spinach and cook until wilted. Return salmon to the pan and simmer for 2-3 minutes. Serve immediately.

Notes

  • Substitute heavy cream with half-and-half for a lighter sauce.
  • For a dairy-free option, use coconut milk and nutritional yeast instead of Parmesan.
