A quick and delicious Tuscan-inspired salmon recipe with a creamy Parmesan sauce, sun-dried tomatoes, and fresh spinach. Perfect for a weeknight dinner or a special occasion, this dish is ready in just 30 minutes and packed with flavor and nutrients.

- 4 salmon fillets (6 oz each)
- 1 tbsp butter
- 1 tbsp olive oil
- Salt & black pepper to taste
- 2 cloves garlic, minced
- 3–4 sun-dried tomatoes, sliced
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 cup fresh spinach
- ½ tsp red pepper flakes (optional)
Instructions
- Pat salmon dry and season with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Sear salmon for 6-7 minutes on one side, then 2-3 minutes on the other. Set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for 30 seconds.
- Add chicken broth, simmer for 2-3 minutes, then stir in heavy cream and Parmesan cheese.
- Add spinach and cook until wilted. Return salmon to the pan and simmer for 2-3 minutes. Serve immediately.
Notes
- Substitute heavy cream with half-and-half for a lighter sauce.
- For a dairy-free option, use coconut milk and nutritional yeast instead of Parmesan.
