Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1½ tsp turmeric
  • 1 tsp cumin
  • ½ tsp black pepper
  • 4 cups chicken broth
  • 1½ cups shredded chicken
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1½ cups spinach or kale
  • Juice of 1 lemon
  • Salt, to taste

Instructions

  • Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger for 2-3 minutes.
  • Stir in turmeric, cumin, and black pepper. Cook for 30 seconds.
  • Add broth, carrots, celery, and chicken. Simmer for 15 minutes.
  • Stir in spinach and lemon juice. Cook for 2 minutes.
  • Season with salt and serve warm.

Notes

  • Add quinoa, rice, or chickpeas for extra heartiness.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Swap chicken for chickpeas for a vegetarian option.
