Ingredients
Filling Part One (Turkey):

3–5 chipotle peppers (canned in adobo sauce), minced

Filling Part Two (Vegetables):

1 tbsp oil

1/2 onion, minced

1 tbsp chili powder

4–5 cups mixed veggies (carrots, zucchini, bell peppers, sweet potatoes)

1 cup chicken broth (more if needed)

1 (14 oz) can pinto or black beans

2 cups shredded Mexican blend cheese

1 1/2 cups plain Greek yogurt
For Serving:

15 large tortillas (10-inch)

Avocado, hot sauce, cilantro (optional)
Instructions

Cook the Turkey: Heat oil in a large pot, cook onions and turkey with spices, chipotle peppers, and salt until browned. Set aside.

Cook the Vegetables: In the same pot, heat oil, cook onions and veggies with spices. Add chicken broth and simmer until veggies are tender.

Combine Fillings: Add cooked turkey, beans, cheese, and Greek yogurt to the veggies. Stir until creamy.

Prepare Tortillas: Warm tortillas to make them pliable.

Assemble Burritos: Place filling in tortillas, fold, and roll tightly.

Wrap & Freeze: Wrap each burrito in plastic wrap or foil and freeze in a freezer-safe bag for up to 3 months.
