Ingredients

2 lbs boneless, skinless chicken thighs (cut into bite-sized chunks)

½ cup creamy peanut butter

1 cup full-fat unsweetened coconut milk

2 tbsp fresh lime juice

2 tbsp soy sauce (or halal fish sauce)

1½ tbsp brown sugar

1 tsp ground ginger

1 tbsp minced garlic (≈3 cloves)

½ tsp crushed red pepper flakes (adjust to taste)
Instructions

Make the Sauce: Whisk all sauce ingredients until smooth. Reserve 1 cup for serving.

Marinate Chicken: Coat chicken in remaining sauce and marinate 1–8 hours.
