Ingredients

Scale

  • 34 Thai peppers or red chilies, chopped

  • 1 shallot, chopped

  • 2 stalks lemongrass or 1 tsp paste

  • 3 garlic cloves, chopped

  • 1 tsp fresh ginger, chopped

  • 2 tbsp fish sauce

  • ¼ cup brown sugar

  • 3 tbsp soy sauce

  • 2 tbsp sriracha

  • 1 tsp turmeric

  • 1 tsp cumin

  • 2 tbsp chopped cilantro (plus more for garnish)

  • Spicy chili flakes (optional)

  • Bamboo skewers (soaked 20 minutes)

Peanut Sauce Ingredients:

  • ¼½ cup creamy peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 2 tbsp chili-garlic sauce

  • 1 tbsp sesame oil

  • 1 tbsp honey

  • 1 tsp lime juice

  • 1 tsp cayenne or paprika

  • 1 tsp garlic powder

  • 1 tsp ginger powder

  • 1 tbsp water (more as needed)

Instructions

  • Mix all marinade ingredients. Add chicken and marinate for 1 hour or overnight.

  • Soak skewers in water.

  • Thread chicken onto skewers.

  • Grill 4–5 minutes per side or until internal temp reaches 165°F.

  • Whisk all peanut sauce ingredients, thinning with water to desired consistency.

  • Serve chicken skewers with sauce. Garnish with cilantro and chili flakes.

Notes

  • For less heat, reduce chili peppers and sriracha.

  • Marinating overnight deepens the flavor.

  • Use natural peanut butter for a cleaner sauce.
