Description

These Thai-inspired beef tortilla rolls are a delicious fusion of bold Asian flavors and soft flour tortillas. Savory, sweet, and customizable, they’re filled with aromatic beef, fresh herbs, crunchy cucumbers, and roasted peanuts. Perfect for busy weeknights, family dinners, or meal prepping ahead.

  • 11.5 lbs ground beef (or chicken/turkey)

  • ½ tsp black pepper

  • 2 cloves garlic, minced

  • 1 tbsp fresh grated ginger

  • 1 tsp Chinese five spice

  • 2 tbsp tamari or soy sauce

  • 2 tbsp sweet Thai chili sauce (or homemade)

  • 23 green onions, chopped

  • 68 flour tortillas

  • 2 Persian cucumbers, thinly sliced

  • ½ cup cilantro

  • ½ cup Thai basil (or regular basil)

  • ⅓ cup roasted peanuts, chopped

  • Chili paste (optional, for dipping)

  • Toasted sesame oil (for drizzling or dipping)


Instructions

  • Cook beef in skillet with pepper until browned.

  • Add garlic, ginger, and five spice; cook 1 min.

  • Stir in tamari and Thai chili sauce; simmer 3–5 mins.

  • Stir in green onions and remove from heat.

  • Warm tortillas in microwave or skillet.

  • Assemble: Add beef, cucumber, herbs, peanuts to tortillas.

  • Roll tightly, drizzle with sesame oil.

  • Serve with chili paste or extra sauce.

Notes

  • Swap beef for ground chicken, turkey, or tofu.

  • Use gluten-free tortillas and tamari for a gluten-free version.
