This homemade Taco Bell Beefy Melt Burrito is packed with seasoned beef, refried beans, Mexican rice, crunchy Fritos, melted cheese, and sour cream, all wrapped in a warm flour tortilla. It’s the perfect fast-food copycat recipe to enjoy at home with better ingredients and incredible flavor!

For the Beef:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • ¼ cup water or beef broth
  • 1 cup refried beans (optional)

For the Burritos:

  • 2 cups cooked Mexican rice
  • 4 large burrito-sized flour tortillas
  • 2 cups Fritos (or Doritos)
  • 1 cup warm nacho cheese sauce
  • 1 cup shredded Mexican cheese blend
  • ½ cup sour cream

Instructions

  • Cook the Beef: Brown the ground beef over medium-high heat. Drain excess grease, then add taco seasoning and water. Simmer for 2-3 minutes. Stir in refried beans if using.
  • Prepare Rice & Tortillas: Heat pre-cooked Mexican rice. Warm tortillas in the microwave for 30 seconds to prevent breaking.
  • Assemble Burritos: On each tortilla, layer beef mixture, rice, Fritos, nacho cheese sauce, shredded cheese, and sour cream.
  • Fold & Roll: Fold in the sides and roll tightly into a burrito.
  • Toast (Optional): Heat a pan over medium heat and toast burritos on both sides for 1-2 minutes until golden brown.
  • Serve & Enjoy: Slice in half and serve with salsa or hot sauce.

Notes

  • For extra flavor, use Doritos instead of Fritos.
