Description

A vibrant summer salad featuring juicy peaches, sweet blueberries, crunchy cucumbers, creamy feta, and fresh basil tossed in a light lemon-honey vinaigrette. Quick, healthy, and perfect for warm weather meals or picnics.


Ingredients

  • 1 pint fresh blueberries

  • 2 peaches, diced

  • 2 Persian cucumbers, sliced

  • ½ cup crumbled feta

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 tablespoon finely chopped basil

  • Kosher salt and black pepper, to taste


Instructions

  • Wash and dry all fresh produce.

  • Slice cucumbers and dice peaches. Add to a large bowl with blueberries.

  • Add chopped basil.

  • In a separate bowl, whisk lemon juice, Dijon, honey, salt, and pepper.

  • Slowly whisk in olive oil to emulsify.

  • Pour dressing over salad and toss gently.

  • Add feta on top and toss lightly again.

  • Serve immediately.

Notes

  • Use ripe but firm peaches for best texture.

  • Add fresh mint for variation.

  • Store leftovers for up to 24 hours in the fridge.
