Ingredients

1 pint fresh blueberries

2 peaches, diced

2 Persian cucumbers, sliced

½ cup crumbled feta

3 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon olive oil

1 tablespoon finely chopped basil

Kosher salt and black pepper, to taste
Instructions

Wash and dry all fresh produce.

Slice cucumbers and dice peaches. Add to a large bowl with blueberries.

Add chopped basil.

In a separate bowl, whisk lemon juice, Dijon, honey, salt, and pepper.

Slowly whisk in olive oil to emulsify.

Pour dressing over salad and toss gently.

Add feta on top and toss lightly again.
