This fresh and vibrant strawberry salad combines juicy strawberries, crisp greens, creamy cheese, and crunchy nuts, all tossed in a tangy balsamic dressing. It’s a perfect dish for spring and summer, easy to prepare, and full of flavor.

Ingredients

Scale
  • 5 cups mixed greens (spinach, arugula, or romaine)
  • 1 ½ cups fresh strawberries, sliced
  • ½ cup crumbled feta or goat cheese
  • ¼ cup sliced almonds or pecans, toasted
  • ¼ cup thinly sliced red onion

For the Dressing:

  • ¼ cup olive oil
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Dijon mustard

Instructions

  • Make the Dressing: Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper in a small bowl. Set aside.
  • Toast the Nuts: In a dry pan over medium heat, toast the almonds or pecans for 2-3 minutes until fragrant. Remove from heat.
  • Assemble the Salad: In a large bowl, combine mixed greens, sliced strawberries, red onion, crumbled cheese, and toasted nuts.
  • Dress the Salad: Drizzle the prepared dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
  • Serve Immediately: Enjoy fresh for the best flavor and texture.

Notes

  • For extra protein, add grilled chicken or shrimp.
  • Swap out nuts or cheese for variations in taste.
  • Keep the dressing separate if making ahead to prevent sogginess.
