Ingredients

Scale

For the Cookies:

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon strawberry extract
  • 15 drops red or pink liquid food coloring
  • 2⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Crunch Topping:

  • 20 Golden Oreo cookies, crushed
  • 1 package (3.4 oz) strawberry-flavored gelatin powder
  • 4 tablespoons unsalted butter, melted

Instructions

  • Prepare the Crunch Topping:
    • Crush the Golden Oreos and place them in a bowl.
    • Mix in the strawberry gelatin powder and melted butter. Spread onto a plate to set.
  • Preheat Oven:
    • Preheat to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  • Make the Cookie Dough:
    • Cream softened butter, granulated sugar, and brown sugar until fluffy.
    • Beat in eggs, one at a time. Add strawberry extract and food coloring.
    • In another bowl, whisk together flour, baking soda, and salt. Gradually combine with wet ingredients until just mixed.
  • Assemble the Cookies:
    • Roll dough into tablespoon-sized balls. Coat each in the crunch topping, pressing gently to adhere.
    • Place on a prepared baking sheet, spaced 2 inches apart.
  • Bake the Cookies:
    • Bake for 8 minutes. Remove from oven, sprinkle extra crunch topping, and bake for an additional 4 minutes or until edges are set.
  • Cool and Serve:
    • Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • For a bolder strawberry flavor, add freeze-dried strawberries to the dough.
