Description

Soft and fluffy Strawberry Cream Cheese Muffins with a rich, creamy cheesecake center and a buttery crumb topping. These bakery-style muffins are bursting with fresh strawberries, making them perfect for breakfast, brunch, or a sweet snack.

Ingredients

  • For best results, use fresh strawberries, but frozen (thawed and drained) work too.
  • Toss strawberries in flour before adding to the batter to prevent sinking.

Instructions

  • Preheat oven to 375°F (190°C). Line or grease a muffin tin.
  • In a bowl, mix cream cheese, sugar, egg yolk, and vanilla for the filling.
  • In another bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, mix eggs, milk, oil, and vanilla. Combine with dry ingredients, then fold in strawberries.
  • Make the crumb topping by mixing flour, sugar, and butter until crumbly.
  • Fill muffin cups halfway, add a teaspoon of cream cheese filling, then top with more batter. Sprinkle with crumb topping.
  • Bake for 18-22 minutes or until golden brown. Let cool before serving.
