Ingredients
- For best results, use fresh strawberries, but frozen (thawed and drained) work too.
- Toss strawberries in flour before adding to the batter to prevent sinking.
Instructions
- Preheat oven to 375°F (190°C). Line or grease a muffin tin.
- In a bowl, mix cream cheese, sugar, egg yolk, and vanilla for the filling.
- In another bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix eggs, milk, oil, and vanilla. Combine with dry ingredients, then fold in strawberries.
- Make the crumb topping by mixing flour, sugar, and butter until crumbly.
- Fill muffin cups halfway, add a teaspoon of cream cheese filling, then top with more batter. Sprinkle with crumb topping.
- Bake for 18-22 minutes or until golden brown. Let cool before serving.
