Description

These sticky honey lime chicken thighs are juicy, flavorful, and glazed with a sweet, tangy, and slightly spicy sauce. They’re perfect for grilling, broiling, or baking, and ideal for busy weeknights or casual gatherings.


Ingredients

  • lbs boneless, skinless chicken thighs, cut into 2-inch pieces

  • 3 Tbsp low-sodium soy sauce

  • 6 Tbsp honey or maple syrup

  • 1 tsp lime zest

  • 3 Tbsp fresh lime juice

  • 4 cloves garlic, minced (or ½ tsp garlic powder)

  • 1½ Tbsp grated fresh ginger

  • 1 Tbsp vegetable oil

  • 1½ Tbsp Sriracha (adjust to taste)

  • 1¼ tsp kosher salt

  • ½ tsp cornstarch (optional, for thickening glaze)

  • Optional garnish: chopped cilantro or parsley, lime wedges

  • Optional: skewers if grilling


Instructions

  • Whisk together all marinade ingredients. Reserve ½ cup for basting.

  • Marinate chicken in remaining mixture for 30 mins (or up to 12 hrs).

  • For the glaze: mix reserved marinade with cornstarch and heat to thicken.

  • Grill, broil, or bake chicken until cooked through, basting with glaze during the last few minutes.

  • Let rest 5 minutes, garnish with herbs and lime wedges, and serve.

Notes

  • Marinate up to 12 hours, but reduce lime juice slightly if marinating overnight.

  • Broiler or oven methods work well if grilling isn’t available.

  • Serve hot, at room temperature, or cold—great for meal prep.

  • Easily customizable: use chicken breasts or adjust heat with more/less Sriracha.
