These sticky honey lime chicken thighs are juicy, flavorful, and glazed with a sweet, tangy, and slightly spicy sauce. They’re perfect for grilling, broiling, or baking, and ideal for busy weeknights or casual gatherings.
Ingredients

2½ lbs boneless, skinless chicken thighs, cut into 2-inch pieces

3 Tbsp low-sodium soy sauce

6 Tbsp honey or maple syrup

1 tsp lime zest

3 Tbsp fresh lime juice

4 cloves garlic, minced (or ½ tsp garlic powder)

1½ Tbsp grated fresh ginger

1 Tbsp vegetable oil

1½ Tbsp Sriracha (adjust to taste)

1¼ tsp kosher salt

½ tsp cornstarch (optional, for thickening glaze)

Optional garnish: chopped cilantro or parsley, lime wedges

Instructions

Whisk together all marinade ingredients. Reserve ½ cup for basting.

Marinate chicken in remaining mixture for 30 mins (or up to 12 hrs).

For the glaze: mix reserved marinade with cornstarch and heat to thicken.

Grill, broil, or bake chicken until cooked through, basting with glaze during the last few minutes.

Let rest 5 minutes, garnish with herbs and lime wedges, and serve.

Marinate up to 12 hours, but reduce lime juice slightly if marinating overnight.
