Ingredients

Scale

For the Steak & Rice:

  • 1 lb steak (sirloin or flank), cut into bite-sized pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp olive oil
  • ½ cup diced bell peppers (any color)
  • ½ cup diced onion
  • ½ cup corn (optional)
  • 1 cup uncooked white rice
  • 2 cups beef broth

For the Queso Sauce:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup heavy cream
  • 1 small can diced green chilies
  • ½ tsp garlic powder

For Topping (Optional):

  • Diced avocado
  • Chopped tomatoes
  • Fresh cilantro

Instructions

  • Prepare the Steak: Season the steak with salt, pepper, chili powder, and cumin. Let it sit while you prepare the other ingredients.
  • Cook the Steak: Heat olive oil in a skillet over medium-high heat. Add the steak and cook for 3-5 minutes until browned. Remove and set aside.
  • Sauté the Vegetables: In the same skillet, add diced onions, bell peppers, and corn. Sauté for 2-3 minutes until slightly softened.
  • Toast the Rice: Stir in the uncooked rice and toast for 1 minute to enhance its flavor.
  • Add the Broth: Pour in the beef broth and bring to a simmer. Cover and cook for 15 minutes until the rice is tender.
  • Make the Queso Sauce: In a separate saucepan, combine heavy cream, shredded cheeses, diced green chilies, and garlic powder. Stir over low heat until smooth.
  • Combine Everything: Return the cooked steak to the skillet, pour in the queso sauce, and stir to combine. Let it simmer for 2-3 minutes.
  • Serve & Garnish: Top with diced avocado, tomatoes, and fresh cilantro if desired. Enjoy warm!

Notes

  • Substitute steak with chicken or shrimp for a variation.
  • For extra spice, add diced jalapeños to the queso sauce.
  • Leftovers can be stored in an airtight container for up to 3 days.
