A quick, healthy, and flavorful Mediterranean-style squid dish made with fresh garlic, lemon, tomato paste, arugula, and olives. Light, protein-rich, and ready in just 25 minutes!
Ingredients

10 oz (300g) squid, cleaned

½ lemon, juiced

2 tbsp olive oil

2 garlic cloves, minced or pressed

⅓ cup olives, pitted

½ cup arugula
-
2 tbsp tomato paste
-
1 tbsp dried basil (or fresh)

Crushed pepper, to taste

Parmesan cheese, for topping
Instructions

In a skillet, cook squid with a splash of water for 3–4 minutes, covered.

Drain liquid, then add lemon juice and olive oil.

Stir in tomato paste, adding 1–2 tbsp water if needed.

Add garlic, basil, and crushed pepper. Mix well and turn off the heat.

Stir in arugula and olives while warm.

Top with Parmesan and serve hot.

Do not overcook squid; it turns rubbery quickly.

Arugula should be added off-heat to retain its bite.
