Description

A quick, healthy, and flavorful Mediterranean-style squid dish made with fresh garlic, lemon, tomato paste, arugula, and olives. Light, protein-rich, and ready in just 25 minutes!


Ingredients

  • 10 oz (300g) squid, cleaned

  • ½ lemon, juiced

  • 2 tbsp olive oil

  • 2 garlic cloves, minced or pressed

  • ⅓ cup olives, pitted

  • ½ cup arugula

  • 2 tbsp tomato paste

  • 1 tbsp dried basil (or fresh)

  • Crushed pepper, to taste

  • Parmesan cheese, for topping


Instructions

  • In a skillet, cook squid with a splash of water for 3–4 minutes, covered.

  • Drain liquid, then add lemon juice and olive oil.

  • Stir in tomato paste, adding 1–2 tbsp water if needed.

  • Add garlic, basil, and crushed pepper. Mix well and turn off the heat.

  • Stir in arugula and olives while warm.

  • Top with Parmesan and serve hot.

Notes

  • Do not overcook squid; it turns rubbery quickly.

  • Arugula should be added off-heat to retain its bite.

  • Use dairy-free cheese or omit Parmesan for a dairy-free option.
