  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • 1 cup fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • ½ tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 375°F (190°C) and grease a baking dish.
  • In a bowl, mix spinach, cream cheese, mozzarella, garlic, and Italian seasoning.
  • Cut a pocket into each chicken breast and stuff with the spinach mixture.
  • Brush chicken with olive oil and season with salt, pepper, and garlic powder.
  • Heat a skillet over medium-high heat and sear the chicken for 2 minutes per side.
  • Transfer to the baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes before serving. Garnish with parsley and enjoy!

  • Use fresh or frozen spinach (drain excess moisture if using frozen).
  • For extra crispiness, broil the chicken for the last 2 minutes.
