- 1 cup stone-ground grits
- 4 cups chicken broth
- 2 tbsp unsalted butter
- 1 cup shredded Gouda cheese
- ½ tsp salt
- ¼ tsp black pepper
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp Cajun seasoning
- 2 cloves garlic, minced
- ½ cup diced bell pepper
- ½ cup diced tomatoes
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional)
- Chopped parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Bring chicken broth to a boil and stir in grits. Cook for 15-20 minutes until creamy. Add butter, cheese, salt, and pepper. Set aside.
- Sauté shrimp in olive oil with Cajun seasoning and garlic for 2-3 minutes per side. Remove from pan.
- In the same pan, cook bell peppers, tomatoes, smoked paprika, and red pepper flakes for 3-4 minutes.
- Preheat oven to 375°F (190°C). Spread grits into a greased baking dish, top with shrimp and veggies.
- Cover with foil and bake for 15 minutes. Optional: Broil for 2 minutes for a golden top.
- Garnish with parsley and serve with lemon wedges.
