Description

A creamy, cheesy Southern comfort dish with perfectly seasoned shrimp and bold Cajun flavors. This easy casserole is perfect for brunch, dinner, or meal prep.

  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 2 tbsp unsalted butter
  • 1 cup shredded Gouda cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 2 cloves garlic, minced
  • ½ cup diced bell pepper
  • ½ cup diced tomatoes
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional)
  • Chopped parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  • Bring chicken broth to a boil and stir in grits. Cook for 15-20 minutes until creamy. Add butter, cheese, salt, and pepper. Set aside.
  • Sauté shrimp in olive oil with Cajun seasoning and garlic for 2-3 minutes per side. Remove from pan.
  • In the same pan, cook bell peppers, tomatoes, smoked paprika, and red pepper flakes for 3-4 minutes.
  • Preheat oven to 375°F (190°C). Spread grits into a greased baking dish, top with shrimp and veggies.
  • Cover with foil and bake for 15 minutes. Optional: Broil for 2 minutes for a golden top.
  • Garnish with parsley and serve with lemon wedges.
