Instructions

  • Caramelize the Pineapple:
    • Pat pineapple slices dry and coat with a mixture of brown sugar, black pepper, and a pinch of salt.
    • Heat butter in a skillet over medium-high heat and caramelize pineapple rings for about 3 minutes per side. Let cool.
  • Prepare the Puff Pastry:
    • Preheat oven to 400°F. Roll out puff pastry to ¼-inch thickness and cut into 12 squares.
    • Place squares on parchment-lined baking sheets, brush with egg wash, and dock with a fork.
  • Assemble and Bake:
    • Place a caramelized pineapple ring on each pastry square.
    • Bake for 15–17 minutes, or until pastry is golden and pineapple is tender.
  • Garnish and Serve:
    • Sprinkle with chili flakes. Top with prosciutto just before serving. Serve warm or at room temperature.
