- ½ tsp black pepper
- 2 tbsp cornstarch
- 1 tbsp olive oil
For the Sauce:
- 1 cup pineapple chunks (fresh or canned)
- 3 cloves garlic (minced)
- 1 tsp red pepper flakes (adjust to taste)
- 2 tbsp honey
- ¼ cup soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
For Serving:
- Steamed rice or quinoa
- Chopped green onions
- Toasted sesame seeds (optional)
Instructions
- Toss the chicken with salt, pepper, and cornstarch until evenly coated.
- Heat olive oil in a pan over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove from the pan.
- In the same pan, sauté garlic and red pepper flakes for 30 seconds.
- Add pineapple, honey, soy sauce, and rice vinegar. Simmer for 2 minutes.
- Stir in the cornstarch slurry and cook until thickened.
- Return the chicken to the pan, tossing it in the sauce. Cook for 2 more minutes.
- Serve over rice or quinoa, garnished with green onions and sesame seeds.
