Ingredients

or the Chicken:
  • 1 lb boneless, skinless chicken breast (cubed)
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 1 tbsp olive oil
For the Sauce:
  • 1 cup pineapple chunks (fresh or canned)
  • 3 cloves garlic (minced)
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp honey
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)
For Serving:
  • Steamed rice or quinoa
  • Chopped green onions
  • Toasted sesame seeds (optional)

Instructions

  • Toss the chicken with salt, pepper, and cornstarch until evenly coated.
  • Heat olive oil in a pan over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove from the pan.
  • In the same pan, sauté garlic and red pepper flakes for 30 seconds.
  • Add pineapple, honey, soy sauce, and rice vinegar. Simmer for 2 minutes.
  • Stir in the cornstarch slurry and cook until thickened.
  • Return the chicken to the pan, tossing it in the sauce. Cook for 2 more minutes.
  • Serve over rice or quinoa, garnished with green onions and sesame seeds.

Notes

  • Adjust spice levels by increasing or decreasing red pepper flakes.
  • Use fresh pineapple for the best flavor.
