Description

Soft, chewy pretzel bites with a golden crust, paired with a rich and creamy vegan cheese sauce. Perfect for snacking, game nights, or party appetizers!

For the Pretzel Bites:

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 tbsp sugar or maple syrup
  • 1 tsp salt
  • 1 cup warm water (110°F)
  • 2 tbsp melted vegan butter

For the Baking Soda Bath:

  • 4 cups water
  • ¼ cup baking soda

For the Vegan Cheese Sauce:

  • 1 cup potatoes (peeled & diced)
  • ½ cup carrots (chopped)
  • 1 clove garlic
  • ½ cup unsweetened plant-based milk
  • ¼ cup nutritional yeast
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp smoked paprika

For Topping:

  • 2 tbsp melted vegan butter
  • Coarse salt

Instructions

Make the Dough: Mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy. Stir in flour, salt, and melted butter. Knead for 5 minutes, cover, and let rise for 1 hour.

Shape the Pretzel Bites: Preheat oven to 425°F. Roll dough into long ropes, cut into 1-inch pieces.

Baking Soda Bath: Boil 4 cups of water, add baking soda. Drop pretzel bites in for 30 seconds, then place on a baking sheet.

Bake: Brush with melted vegan butter, sprinkle with salt, and bake for 12-15 minutes until golden brown.

Make the Cheese Sauce: Boil potatoes, carrots, and garlic until soft. Blend with plant-based milk, nutritional yeast, lemon juice, salt, and smoked paprika until smooth.

Serve & Enjoy! Dip warm pretzel bites into the creamy vegan cheese sauce.
