- 1.5 pounds (680g) boneless, skinless chicken breasts
- 1 tbsp butter
- Salt, to taste
- ¼ tsp lemon pepper seasoning
- ¼ tsp paprika
- 1 tbsp vegetable oil
- 4 ounces (113g) mushrooms, sliced
- 10 ounces (280g) fresh spinach
- 4 cloves garlic, minced
- ⅔ cup half-and-half
- ⅔ cup shredded mozzarella cheese
- 4 slices Pepper Jack cheese
Instructions
- Preheat oven to 375°F (190°C) and butter a baking dish.
- Season chicken with salt, lemon pepper, and paprika. Sear in butter for 3–4 minutes per side; transfer to baking dish.
- Sauté mushrooms in oil until tender; set aside.
- Wilt spinach in skillet; add garlic and cook for 1 minute. Stir in half-and-half and mozzarella until creamy. Season with salt.
- Spread creamed spinach over chicken, top with mushrooms, and place a slice of Pepper Jack on each.
- Bake for 15–20 minutes or until chicken is cooked through and cheese is bubbly. Broil for 2–3 minutes for a golden top.
Notes
- Swap Pepper Jack for mozzarella or Monterey Jack if desired.
- Pair with mashed potatoes or steamed veggies for a complete meal.
- Store leftovers in the fridge for up to 3 days.
