A hearty and comforting Slow Cooker Chuck Roast cooked low and slow with vegetables and savory broth. Perfect for busy weeknights or special occasions.
Ingredients

3–4 lb Beef Chuck Roast (boneless)

Salt & Pepper, to taste

1 tbsp Garlic Powder (optional)

1 tbsp Italian Seasoning

1 Large Onion, sliced

4 Large Carrots, peeled & cut into chunks

4–5 Medium Potatoes, diced (Yukon gold or russet)

4 Cloves Garlic, minced

2 cups Beef Broth
-
2 tbsp Worcestershire Sauce

2 Bay Leaves (optional)

Fresh Parsley, for garnish (optional)
Instructions

Prepare the Roast: Season beef with salt, pepper, garlic powder, and Italian seasoning. Let rest for 15 minutes.

Sear the Meat (Optional): Heat oil in a skillet over medium-high heat. Sear roast for 3-4 minutes per side. Transfer to slow cooker.

Add Veggies & Liquid: Add onions, carrots, potatoes, and garlic around the roast. Pour beef broth and Worcestershire sauce over everything. Add bay leaves if desired.

Cook the Roast: Cover and cook on LOW for 8-9 hours or HIGH for 4-5 hours until tender.

Serve & Enjoy: Remove bay leaves, shred or slice the roast, and serve with veggies. Garnish with parsley.

For thicker broth, simmer liquid with cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
