Instructions
Follow these simple steps to create Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce:
1. Prepare the Shrimp: In a medium bowl, combine shrimp with olive oil, chili powder, salt, and pepper. Toss until the shrimp are well-coated.
2. Cook the Shrimp: Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove from heat and set aside.
3. Make the Salsa: In another bowl, mix diced mango, red bell pepper, red onion, and half of the lime juice. Season with salt, and pepper, then toss to combine.
4. Prepare the Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt, lime juice, chili powder, and a pinch of salt until smooth and creamy.
5. Assemble the Bowls: Divide quinoa or rice (if using) among serving bowls. Top with diced avocado, cooked shrimp, and the mango salsa. Drizzle with the lime-chili sauce and garnish with fresh cilantro.
