These Cheesy Sausage Muffins are an easy, protein-packed breakfast perfect for meal prep. Loaded with sausage, cheese, and a fluffy muffin base, they’re great for busy mornings, snacks, or brunch!

- 2 large eggs
- ¾ cup milk
- ½ cup butter (melted)
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 ½ cups shredded cheddar cheese
- 1 lb cooked breakfast sausage (crumbled)
Optional Add-Ins:
- ½ tsp red pepper flakes (for spice)
- ½ tsp garlic powder (for flavor)
- ¼ cup chopped green onions (for freshness)
Instructions
- Preheat oven to 375°F (190°C) and grease or line a muffin tin.
- Cook the sausage in a skillet over medium heat until browned. Drain excess grease.
- Mix wet ingredients (eggs, milk, butter) in a large bowl.
- Whisk dry ingredients (flour, baking powder, salt) in a separate bowl.
- Combine wet and dry ingredients gently, then fold in sausage and cheese.
- Fill muffin cups ¾ full and bake for 18-22 minutes or until golden brown.
- Cool for 5 minutes before serving. Enjoy warm or store for later!
Notes
- Store in the fridge for 4 days or freeze for up to 3 months.
- Reheat in the microwave (30 sec) or oven (350°F for 10 min).
- Use gluten-free flour for a GF version.
