  • 1 loaf French bread, cubed (about 1012 cups)
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 6 large eggs
  • 2 cups whole milk
  • ¼ cup maple syrup (or honey)
  • ½ teaspoon cinnamon
  • 1 teaspoon lemon zest
  • 1 ½ cups fresh raspberries (or frozen, thawed & drained)
  • Powdered sugar (for dusting)
  • Maple syrup (for serving)
  • Chopped nuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Spread half of the bread cubes in the dish.
  • In a bowl, beat cream cheese, sugar, and vanilla until smooth. Dollop over the bread and spread slightly.
  • Sprinkle raspberries evenly over the cream cheese layer.
  • In another bowl, whisk eggs, milk, maple syrup, cinnamon, and lemon zest. Pour over the bread mixture.
  • Cover and refrigerate for at least 30 minutes or overnight.
  • Bake for 40-45 minutes until golden brown and set. If browning too quickly, cover with foil.
  • Let cool slightly, then dust with powdered sugar and serve with maple syrup.
