- 1 loaf French bread, cubed (about 10–12 cups)
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 6 large eggs
- 2 cups whole milk
- ¼ cup maple syrup (or honey)
- ½ teaspoon cinnamon
- 1 teaspoon lemon zest
- 1 ½ cups fresh raspberries (or frozen, thawed & drained)
- Powdered sugar (for dusting)
- Maple syrup (for serving)
- Chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Spread half of the bread cubes in the dish.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth. Dollop over the bread and spread slightly.
- Sprinkle raspberries evenly over the cream cheese layer.
- In another bowl, whisk eggs, milk, maple syrup, cinnamon, and lemon zest. Pour over the bread mixture.
- Cover and refrigerate for at least 30 minutes or overnight.
- Bake for 40-45 minutes until golden brown and set. If browning too quickly, cover with foil.
- Let cool slightly, then dust with powdered sugar and serve with maple syrup.
