This ranch chicken meal prep is the perfect easy and healthy make-ahead meal. Juicy, ranch-seasoned chicken pairs perfectly with crispy roasted potatoes and tender broccoli. Cook everything on one pan for a quick, flavorful, and nutritious meal that lasts all week.

For the Ranch Chicken:

  • 2 boneless, skinless chicken breasts (halved into cutlets)
  • 1 tbsp ranch seasoning mix
  • 1 tbsp olive oil

For the Roasted Vegetables:

  • 2 cups baby potatoes, halved
  • 2 cups broccoli florets
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt & black pepper, to taste

For Serving:

  • Lemon wedges (for extra flavor)
  • Chopped parsley (optional garnish)

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Season chicken with ranch seasoning and olive oil in a bowl. Set aside.
  • Prepare potatoes: Toss with olive oil, garlic powder, salt, and pepper. Spread on the baking sheet.
  • Bake potatoes for 10 minutes first to ensure they cook evenly.
  • Add chicken and broccoli: Push potatoes to one side and add the seasoned chicken and broccoli to the pan. Drizzle broccoli with olive oil, salt, and pepper.
  • Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Rest the chicken for 5 minutes before slicing.
  • Serve immediately or divide into meal prep containers for the week.

Notes

  • For extra crispiness, broil the chicken and potatoes for the last 2 minutes.
  • Swap potatoes for cauliflower or zucchini for a lower-carb option.
  • Store in the fridge for up to 4 days or freeze for up to 3 months.
