For the Ranch Chicken:
- 2 boneless, skinless chicken breasts (halved into cutlets)
- 1 tbsp ranch seasoning mix
- 1 tbsp olive oil
For the Roasted Vegetables:
- 2 cups baby potatoes, halved
- 2 cups broccoli florets
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt & black pepper, to taste
For Serving:
- Lemon wedges (for extra flavor)
- Chopped parsley (optional garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season chicken with ranch seasoning and olive oil in a bowl. Set aside.
- Prepare potatoes: Toss with olive oil, garlic powder, salt, and pepper. Spread on the baking sheet.
- Bake potatoes for 10 minutes first to ensure they cook evenly.
- Add chicken and broccoli: Push potatoes to one side and add the seasoned chicken and broccoli to the pan. Drizzle broccoli with olive oil, salt, and pepper.
- Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Rest the chicken for 5 minutes before slicing.
- Serve immediately or divide into meal prep containers for the week.
Notes
- For extra crispiness, broil the chicken and potatoes for the last 2 minutes.
- Swap potatoes for cauliflower or zucchini for a lower-carb option.
