- 3 lbs beef chuck roast
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tbsp olive oil
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- ½ cup tomato sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 6 sandwich buns (brioche, ciabatta, or hoagie rolls)
- Pickles, coleslaw, crispy fried onions (optional)
- BBQ sauce or horseradish mayo
Instructions
- Season & Sear the Beef: Rub the roast with salt, pepper, and seasonings. Sear in hot oil for 2-3 minutes per side.
- Prepare the Cooking Liquid: Place onions and garlic in a slow cooker. Add the beef, broth, tomato sauce, Worcestershire sauce, and mustard.
- Slow Cook: Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until fork-tender.
- Shred the Beef: Remove the beef, shred with forks, and mix it back into the sauce.
- Assemble Sandwiches: Toast the buns, pile on the beef, and add your favorite toppings.
Notes
- For extra flavor, add a splash of apple cider vinegar to the sauce.
- Store leftovers in an airtight container in the fridge for up to 4 days.
