Crispy on the outside and creamy on the inside, these Potato Cheese Sticks are the ultimate snack. Filled with gooey cheese and wrapped in a crunchy panko coating, they’re perfect for parties or family gatherings.

- 3 russet potatoes, cooked and cubed
- ¼ cup diced bacon
- ¼ cup diced green onions
- ½ cup sour cream
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 block cheddar cheese, cut into strips
- ⅔ cup cornstarch
- Flour, as needed
- 1–2 eggs, beaten
- 100 g panko breadcrumbs
- 1 liter vegetable oil (canola or peanut oil)
Instructions
- Mash cooked potatoes with bacon, green onions, sour cream, salt, and pepper until smooth.
- Shape potato mixture into sticks with cheddar cheese strips in the center.
- Coat each stick in cornstarch, then dip in beaten egg and roll in panko breadcrumbs. Repeat for extra crispiness.
- Refrigerate coated sticks for 30 minutes.
- Fry in oil at 350°F (175°C) for 2–3 minutes or until golden brown. Drain on paper towels.
- Serve hot with marinara, ranch, or your favorite dipping sauce
Notes
- Double-coating the sticks ensures a crispier crust.
- For a healthier option, bake at 400°F (200°C) for 15–20 minutes, turning halfway through.
- Store leftovers in an airtight container for up to 2 days and reheat in the oven for best results.
