Description

A classic Southern sweet-and-savory side dish made with juicy pineapple chunks, sharp cheddar cheese, and a crispy buttery cracker topping. Perfect for holidays or comfort food dinners.

Ingredients

Scale
  • 1 (20 oz) can pineapple chunks or tidbits in juice

  • 1/4 cup reserved pineapple juice

  • 1/4 cup all-purpose (or self-rising) flour

  • 1/2 cup granulated sugar

  • 1 1/2 cups shredded sharp cheddar cheese

  • 1/4 cup melted butter

  • 1 1/2 cups butter cracker crumbles (like Ritz), divided

Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 1-quart shallow baking dish.

  • Drain the pineapple, reserving 1/4 cup juice.

  • In a bowl, whisk together reserved juice and flour until smooth.

  • Stir in sugar, cheese, and 1/2 cup cracker crumbles.

  • Fold in the pineapple chunks and pour into prepared dish.

  • Mix remaining 1 cup cracker crumbles with melted butter and sprinkle over top.

  • Bake for 20–30 minutes until bubbly and golden.

  • Let rest 5–10 minutes before serving.

Notes

  • Always use pineapple in juice, not syrup.

  • Shred your own cheese for better melt.

  • Great make-ahead dish—add topping just before baking.
