  • 1/4 cup mayonnaise or Greek yogurt (for creaminess)

  • 1 tbsp lemon juice (for brightness)

  • 1/2 cup celery, chopped (for crunch)

  • 1/4 cup red onion, finely diced (optional, for extra flavor)

  • 1/2 cup cherry tomatoes, halved (optional, for freshness)

  • Salt & pepper to taste

  • Chopped fresh basil or parsley (for garnish, optional)


Instructions

  • Prepare the Chicken: Shred or dice cooked chicken and place it in a large mixing bowl.

  • Make the Pesto Dressing: In a small bowl, combine pesto, mayonnaise (or Greek yogurt), and lemon juice. Whisk until smooth.

  • Combine Chicken and Dressing: Pour the pesto dressing over the chicken and gently mix until well coated.

  • Add Vegetables: Fold in celery, red onion, and cherry tomatoes (if using). Season with salt and pepper to taste.

  • Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
