Description

This Overnight Breakfast Casserole is the ultimate make-ahead dish for busy mornings or relaxed brunches. Made with cubed bread, mixed berries, and a lightly sweetened custard, it’s easy to prepare and delivers a comforting, delicious breakfast every time. Simply assemble the night before, bake in the morning, and enjoy a warm, satisfying start to your day.

Ingredients

Scale
  • 8 cups (about 1 loaf) thick, crusty bread, cubed
  • 2 cups mixed berries (fresh or frozen)
  • 1 cup unsweetened applesauce or mashed banana
  • 2 cups milk of choice (dairy or plant-based)
  • ¼ cup pure maple syrup or preferred liquid sweetener
  • 1 teaspoon pure vanilla extract (optional)
  • ¼ teaspoon salt (optional)

Instructions

  • Prepare Bread: If using fresh bread, let it sit uncovered for a day to become stale, or bake at 300°F (150°C) for 15 minutes to dry it out.
  • Assemble Casserole: Grease a 9×13-inch baking dish. Spread cubed bread evenly, then sprinkle mixed berries over the top.
  • Prepare Custard: In a large bowl, whisk together applesauce or mashed banana, milk, maple syrup, vanilla extract, and salt.
  • Combine and Refrigerate: Pour custard mixture over the bread and berries, pressing down gently to ensure the bread is soaked. Cover and refrigerate overnight.
  • Bake: Preheat oven to 350°F (175°C). Bake casserole uncovered for 45–50 minutes, or until golden brown and set.
  • Serve: Allow to cool for a few minutes before serving. Optionally drizzle with syrup or sprinkle with powdered sugar.

Notes

  • Thick breads like brioche, sourdough, or challah work best for this recipe.
  • Substitute berries with chopped apples and cinnamon for an apple cinnamon variation.
  • Leftovers can be stored in the refrigerator for up to 3 days.
