This one-pan oven-roasted chicken recipe delivers juicy drumsticks with sweet cherry tomatoes, caramelized onions, and roasted garlic. It’s simple, healthy, and full of flavor.


Ingredients

  • 3 tablespoons olive oil, divided

  • 1 red onion, cut into 8 wedges

  • 3 cups cherry tomatoes, halved

  • Salt and freshly ground black pepper, to taste

  • 1 teaspoon smoked paprika

  • 6 chicken drumsticks

  • 4 garlic cloves, peeled and crushed


Instructions

  • Preheat oven to 400°F. Grease a 9-by-13-inch baking dish with 1 tbsp olive oil.

  • Spread onion wedges, halved cherry tomatoes, and crushed garlic in the dish. Drizzle with 1 tbsp olive oil.

  • Season drumsticks with salt, pepper, and smoked paprika. Place over vegetables.

  • Drizzle remaining 1 tbsp olive oil over chicken.

  • Roast for 35–40 minutes until chicken is fully cooked (internal temp 165°F) and tomatoes are soft.

  • Let rest 5 minutes, then spoon vegetables over chicken and serve.

Notes

  • For crispier chicken, use a wire rack.

  • Add lemon juice or fresh herbs before serving for extra brightness.
