This one-pan oven-roasted chicken recipe delivers juicy drumsticks with sweet cherry tomatoes, caramelized onions, and roasted garlic. It’s simple, healthy, and full of flavor.
Ingredients

3 tablespoons olive oil, divided

1 red onion, cut into 8 wedges

3 cups cherry tomatoes, halved

Salt and freshly ground black pepper, to taste

1 teaspoon smoked paprika

6 chicken drumsticks

4 garlic cloves, peeled and crushed
Instructions

Preheat oven to 400°F. Grease a 9-by-13-inch baking dish with 1 tbsp olive oil.

Spread onion wedges, halved cherry tomatoes, and crushed garlic in the dish. Drizzle with 1 tbsp olive oil.

Season drumsticks with salt, pepper, and smoked paprika. Place over vegetables.

Drizzle remaining 1 tbsp olive oil over chicken.

Roast for 35–40 minutes until chicken is fully cooked (internal temp 165°F) and tomatoes are soft.
