  • Author: Lauren Baker
  • Total Time: 1 hour

Ingredients

– 1 tablespoon olive oil
– 1 large onion, diced
– 2 cloves garlic, minced
– 1 pound ground beef (or turkey)
– 1 can (15 ounces) kidney beans, drained and rinsed
– 1 can (15 ounces) black beans, drained and rinsed
– 1 can (14.5 ounces) diced tomatoes
– 1 can (6 ounces) tomato paste
– 2 cups beef broth (or vegetable broth)
– 2 tablespoons chili powder
– 1 tablespoon ground cumin
– 1 teaspoon smoked paprika
– ½ teaspoon salt
– ½ teaspoon black pepper
– 1 cup corn (fresh, frozen, or canned)
– Optional toppings: shredded cheese, sour cream, chopped green onions, and cilantro

Instructions

Creating One-Pot Chili is straightforward if you follow these simple steps:

1. Heat Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Sauté Onion and Garlic: Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
3. Brown the Meat: Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
4. Add Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes, and tomato paste until well combined.
5. Pour in Broth: Add the beef broth to the pot, ensuring all ingredients are submerged.
6. Season: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir to combine.
7. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
8. Add Corn: In the last 5 minutes of cooking, stir in the corn. Allow it to heat through.
9. Taste and Adjust: Taste the chili and adjust seasonings if needed. Add more salt, pepper, or chili powder according to your preference.
10. Serve: Once the chili is fully cooked, remove it from heat and prepare to serve.
