- 12 oz smoked sausage, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced carrots
- ½ red onion, sliced
- 1 small zucchini, sliced
- 1 tbsp olive oil
For Cajun Seasoning:
- 1 tsp Cajun seasoning
- ½ tsp garlic powder
- ½ tsp dried oregano
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Slice the sausage and vegetables evenly.
- Heat olive oil in a large skillet over medium-high heat.
- Add sausage and cook for 3-4 minutes until browned. Remove and set aside.
- In the same pan, sauté bell peppers, carrots, onion, and zucchini. Sprinkle with Cajun seasoning and cook for 5-7 minutes.
- Return sausage to the pan, toss everything together, and cook for another 2 minutes.
- Serve over rice, quinoa, or as is. Garnish with parsley and a squeeze of lemon juice.
