Ingredients

  • 12 oz smoked sausage, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced carrots
  • ½ red onion, sliced
  • 1 small zucchini, sliced
  • 1 tbsp olive oil

For Cajun Seasoning:

  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Slice the sausage and vegetables evenly.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add sausage and cook for 3-4 minutes until browned. Remove and set aside.
  • In the same pan, sauté bell peppers, carrots, onion, and zucchini. Sprinkle with Cajun seasoning and cook for 5-7 minutes.
  • Return sausage to the pan, toss everything together, and cook for another 2 minutes.
  • Serve over rice, quinoa, or as is. Garnish with parsley and a squeeze of lemon juice.
