Description

This no-bake strawberry mousse cake is a light, creamy, and refreshing dessert that’s perfect for summer. With a buttery Golden Oreo crust, fluffy strawberry mousse filling, and a glossy strawberry jam topping, it’s a showstopping dessert that doesn’t require an oven. It’s easy to make, bursting with fresh strawberry flavor, and perfect for any occasion.

Crust:

  • 24 Golden Oreos (crushed)
  • 5 tablespoons unsalted butter (melted)

Mousse Filling:

  • 2 cups heavy whipping cream (cold)
  • 8 ounces mascarpone cheese or cream cheese (softened)
  • 1 cup confectioners’ sugar
  • 1 ½ cups fresh strawberries (pureed and strained)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons unflavored gelatin
  • 3 tablespoons water

Jam Topping:

  • 1 cup fresh strawberries (pureed and strained)
  • ¼ cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons water

Optional Garnish: Fresh whipped cream and sliced strawberries.


Instructions

  • Crush Golden Oreos into fine crumbs and mix with melted butter. Press into a springform pan and freeze.
  • Puree and strain fresh strawberries. Bloom gelatin in water, dissolve it, and mix with the strawberry puree.
  • Whip heavy cream, mascarpone, confectioners’ sugar, and vanilla until fluffy. Fold in the strawberry mixture. Spread the mousse over the crust and refrigerate for 2 hours.
  • Puree and strain more strawberries. Heat with sugar and lemon juice. Dissolve gelatin in water, add to the puree, and let cool. Pour over the mousse layer and refrigerate for 6 hours.
  • Loosen the cake from the pan, garnish with whipped cream and strawberries, slice, and enjoy!
