This no-bake strawberry mousse cake is a light, creamy, and refreshing dessert that’s perfect for summer. Crust:
- 24 Golden Oreos (crushed)
- 5 tablespoons unsalted butter (melted)
Mousse Filling:
- 2 cups heavy whipping cream (cold)
- 8 ounces mascarpone cheese or cream cheese (softened)
- 1 cup confectioners’ sugar
- 1 ½ cups fresh strawberries (pureed and strained)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 teaspoons unflavored gelatin
- 3 tablespoons water
Jam Topping:
- 1 cup fresh strawberries (pureed and strained)
- ¼ cup granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoons water
Optional Garnish: Fresh whipped cream and sliced strawberries.
Instructions
- Crush Golden Oreos into fine crumbs and mix with melted butter. Press into a springform pan and freeze.
- Puree and strain fresh strawberries. Bloom gelatin in water, dissolve it, and mix with the strawberry puree.
- Whip heavy cream, mascarpone, confectioners’ sugar, and vanilla until fluffy. Fold in the strawberry mixture. Spread the mousse over the crust and refrigerate for 2 hours.
- Puree and strain more strawberries. Heat with sugar and lemon juice. Dissolve gelatin in water, add to the puree, and let cool. Pour over the mousse layer and refrigerate for 6 hours.
- Loosen the cake from the pan, garnish with whipped cream and strawberries, slice, and enjoy!
