Ingredients
- For the Crust: 2 cups graham cracker crumbs, ½ cup melted butter, 2 tbsp sugar
- For the Lemon Filling: 8 oz cream cheese (softened), ½ cup powdered sugar, 1 cup whipped topping, 2 tbsp lemon juice, 1 tsp lemon zest
- For the Blueberry Topping: 1 ½ cups fresh blueberries, 2 tbsp honey, 1 tbsp lemon juice
- For Garnish: Extra lemon zest, more fresh blueberries
Instructions
- Make the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press into a 9×9-inch pan and chill.
- Prepare the Lemon Filling: Beat cream cheese and powdered sugar until smooth. Mix in lemon juice and zest. Fold in whipped topping and spread over the crust.
- Make the Blueberry Topping: Toss blueberries with honey and lemon juice, then layer over the filling.
- Chill & Serve: Refrigerate for at least 2 hours before serving. Garnish with lemon zest and fresh blueberries.
