Crust:

190g graham crackers

35g sugar (optional)

75g unsalted butter, melted

Filling:

32 oz full-fat cream cheese (4 blocks), room temp

325g granulated sugar (~1½ cups)

½ tsp salt

1 tsp vanilla extract

4 large eggs, room temp

120g heavy cream (½ cup)

240g sour cream (1 cup)

2–3 tbsp lemon juice

1 tbsp cornstarch

Instructions

Bring all ingredients to room temperature.

Preheat oven to 350°F. Wrap springform pan in foil.

Pulse crust ingredients and press into pan. Bake for 8 mins.

Reduce oven to 325°F.

Beat cream cheese, sugar, salt, and vanilla until smooth.

Whisk eggs and mix in slowly.

Add cream, sour cream, lemon juice, and cornstarch. Mix gently.

Pour batter into crust.

Place pan in a water bath and bake for 75–80 mins.

Cool gradually, then refrigerate overnight.
