These M&M Easter Cookie Bars are soft, chewy, and packed with colorful chocolatey goodness. Made in one pan with simple ingredients, they are perfect for Easter, bake sales, or an easy springtime treat. No rolling or scooping needed—just mix, spread, and bake!

- 1 cup butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup pastel M&M’s (Easter colors)
- ½ cup chocolate chips
- Extra M&M’s and chocolate chips for topping
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- In a large mixing bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
- Gently fold in M&M’s and chocolate chips, being careful not to overmix.
- Spread dough evenly into the baking dish. Press extra M&M’s and chocolate chips on top.
- Bake for 20-25 minutes until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes before slicing into bars. Enjoy!
Notes
- For extra chewiness, slightly underbake and let the bars finish setting as they cool.
- Use white chocolate chips, peanut butter chips, or nuts for variation.
- Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
