For the Mini Brownie Cups:

  • ¾ cup butter, melted
  • ½ cup cocoa powder
  • 1½ cups sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • ½ tsp salt
  • ½ tsp baking powder
  • 1¼ cups flour

For the Raspberry Mousse:

  • 12 oz fresh or frozen raspberries
  • ⅔ cup sugar
  • ¼ cup water
  • 1 packet unflavored gelatin (or 2¼ tsp) + ¼ cup water to soften
  • 1½ cups heavy whipping cream (cold)

For Garnish (Optional):

  • ¼ cup raspberry syrup, jam, or melted chocolate

Instructions

Prepare the Mini Brownie Cups

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. Mix melted butter, cocoa powder, and sugar in a bowl until combined.
  3. Stir in vanilla extract and eggs, one at a time.
  4. Add flour, salt, and baking powder, mixing until just combined.
  5. Scoop 1 tablespoon of batter into each muffin cup (makes 48 cups).
  6. Bake for 14-16 minutes or until a toothpick inserted comes out clean.
  7. Let cool for 5 minutes, then press a well into each brownie cup.

2. Make the Raspberry Mousse

  1. Soften gelatin in ¼ cup cold water and set aside.
  2. In a saucepan, heat raspberries, sugar, and ¼ cup water until the berries break down.
  3. Blend and strain to remove seeds (optional).
  4. Return to saucepan, add softened gelatin, and bring to a boil for 1 minute.
  5. Let the mixture cool to 70-80°F.
  6. Whip heavy cream to stiff peaks, then fold in the cooled raspberry mixture.
  7. Chill for 4-24 hours before piping.

3. Assemble the Brownie Cups

  1. Pipe raspberry mousse into each brownie cup using a piping bag.
  2. Drizzle with raspberry syrup or melted chocolate.
  3. Chill for 4-6 hours before serving.
