Description

A creamy, cheesy, and flavor-packed cold dip made with fiesta corn, sour cream, mayo, fresh cilantro, and spices. Perfect for parties and potlucks.

Ingredients

Scale
  • 2 (15.5 oz) cans Fiesta Corn (or Mexicorn), well drained

  • 1 cup sour cream

  • ½ cup mayonnaise

  • 1 teaspoon ground cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • 2 cups shredded cheese (Mexican blend, cheddar, or pepper jack)

  • 1 cup diced red onion

  • ½ cup chopped fresh cilantro

Instructions

  • Drain the corn thoroughly using a colander. Pat dry to avoid excess moisture.

  • In a large bowl, mix sour cream, mayonnaise, cumin, garlic powder, and salt until smooth.

  • Stir in shredded cheese, red onion, and cilantro.

  • Fold in the corn gently until combined.

  • Chill in the refrigerator for at least 2 hours before serving.

  • Serve cold with chips, crackers, or veggie sticks.

Notes

  • For extra flavor, lightly toast the corn in a skillet before mixing.

  • Can be made a day ahead and stored in the fridge for enhanced flavor.

  • Use Greek yogurt in place of sour cream for a healthier twist.
