  • 4 salmon fillets (skin-on or skinless)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp lemon juice
  • ½ cup fresh spinach (optional)
  • Fresh basil or parsley for garnish
  • Lemon slices for serving

Instructions

  • Season the Salmon – Pat salmon dry and season with salt, pepper, and paprika.
  • Sear the Salmon – Heat olive oil and butter in a pan over medium-high heat. Cook salmon for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  • Make the Sauce – In the same pan, sauté garlic and sun-dried tomatoes for 1-2 minutes. Add heavy cream, Parmesan, and Italian seasoning, stirring until smooth.
  • Add Lemon Juice and Spinach – Stir in lemon juice and spinach, letting it wilt.
  • Combine Everything – Return salmon to the pan, spooning the sauce over it. Simmer for 2 minutes.
  • Serve & Enjoy – Garnish with fresh basil, parsley, and lemon slices. Serve with pasta, rice, or vegetables.

  • For a lighter version, use half-and-half instead of heavy cream.
  • Add red pepper flakes for extra spice.
