  • ½ tsp red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) butter beans, drained & rinsed
  • 1 cup vegetable broth
  • ½ cup heavy cream (or coconut milk)
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • ¼ cup grated Parmesan (optional)
  • Fresh basil or parsley for garnish
  • Crusty bread or rice for serving

Instructions

  • Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft (3-4 minutes).
  • Stir in garlic and red pepper flakes, cooking until fragrant (30 seconds).
  • Add cherry tomatoes and cook for 5 minutes until softened.
  • Stir in butter beans, vegetable broth, oregano, smoked paprika, salt, and pepper. Simmer for 5 minutes.
  • Pour in heavy cream (or coconut milk) and let simmer until thickened (5 minutes).
  • Garnish with Parmesan (if using) and fresh herbs. Serve warm with bread, rice, or pasta.

Notes

  • For a vegan option, use coconut milk and omit Parmesan.
  • Adjust red pepper flakes for more or less spice.
  • Leftovers can be stored in an airtight container for up to 3 days.
