- 1 can (15 oz) butter beans, drained & rinsed
- 1 cup vegetable broth
- ½ cup heavy cream (or coconut milk)
- ½ tsp dried oregano
- ½ tsp smoked paprika
- Salt & pepper to taste
- ¼ cup grated Parmesan (optional)
- Fresh basil or parsley for garnish
- Crusty bread or rice for serving
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft (3-4 minutes).
- Stir in garlic and red pepper flakes, cooking until fragrant (30 seconds).
- Add cherry tomatoes and cook for 5 minutes until softened.
- Stir in butter beans, vegetable broth, oregano, smoked paprika, salt, and pepper. Simmer for 5 minutes.
- Pour in heavy cream (or coconut milk) and let simmer until thickened (5 minutes).
- Garnish with Parmesan (if using) and fresh herbs. Serve warm with bread, rice, or pasta.
Notes
- For a vegan option, use coconut milk and omit Parmesan.
