These Loaded Baked Potato Chips are crispy, golden potato slices topped with melted cheese, beef bacon, sour cream, and fresh chives. They’re the perfect party appetizer, game-day snack, or fun side dish! Easy to make and packed with flavor, these bite-sized potato rounds will be a crowd favorite.

- 3 tbsp extra-virgin olive oil
- Salt and black pepper (to taste)
- 3–4 large potatoes (Yukon Gold or Russet, sliced into ¼-inch rounds)
- 6 pieces cooked beef or turkey bacon (crumbled)
- 1 cup shredded cheddar cheese
- 3 tbsp chopped fresh chives
- ½ cup sour cream (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss potato slices with olive oil, salt, and black pepper. Arrange in a single layer on the baking sheet.
- Roast for 15-20 minutes, flip, and bake for another 12-15 minutes until crispy.
- Sprinkle each slice with crumbled bacon and shredded cheese.
- Return to the oven and bake for 6-8 minutes until the cheese melts.
- Let cool for 5 minutes, then top with sour cream and chives. Serve warm.
Notes
- For extra crispy potatoes, soak them in cold water for 20 minutes before baking, then pat dry.
- Use a wire rack over the baking sheet for even crisping.
- Swap cheddar for mozzarella or pepper jack for a different flavor.
