Description

These Loaded Baked Potato Chips are crispy, golden potato slices topped with melted cheese, beef bacon, sour cream, and fresh chives. They’re the perfect party appetizer, game-day snack, or fun side dish! Easy to make and packed with flavor, these bite-sized potato rounds will be a crowd favorite.

  • 3 tbsp extra-virgin olive oil
  • Salt and black pepper (to taste)
  • 34 large potatoes (Yukon Gold or Russet, sliced into ¼-inch rounds)
  • 6 pieces cooked beef or turkey bacon (crumbled)
  • 1 cup shredded cheddar cheese
  • 3 tbsp chopped fresh chives
  • ½ cup sour cream (for garnish)

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Toss potato slices with olive oil, salt, and black pepper. Arrange in a single layer on the baking sheet.
  • Roast for 15-20 minutes, flip, and bake for another 12-15 minutes until crispy.
  • Sprinkle each slice with crumbled bacon and shredded cheese.
  • Return to the oven and bake for 6-8 minutes until the cheese melts.
  • Let cool for 5 minutes, then top with sour cream and chives. Serve warm.

Notes

  • For extra crispy potatoes, soak them in cold water for 20 minutes before baking, then pat dry.
  • Use a wire rack over the baking sheet for even crisping.
  • Swap cheddar for mozzarella or pepper jack for a different flavor.
